This Fresh Summer Pasta Salad Recipe is quick and easy to prepare and perfect for hot summer days. It also can be made ahead and taken to school, work or uni the next day. This recipe is customizable, absolutely delicious and made out of nourishing ingredients.

When temperatures rise, I am personally always craving some cold dishes like fresh green salads, pasta dishes or healthy bowls. This Fresh Summer Pasta Salad is great for when you want a yummy and healthy meal without putting in too much effort.

What ingredients to use for this recipe?

This recipe is made with healthy but pretty basic ingredients. And remember that the ingredients are adjustable! So you can always switch them out for other ingredients that you have on hand or prefer.

Here are the ingredients that I used:

  • Pasta: Of course you will need some pasta. I love using whole wheat pasta, but other pasta recipes will work too. You can use literally anything here from lentil pasta to regular pasta.
  • Olives: I love adding olives to my pasta salads. They provide some healthy fats and are super tasty too!
  • Cucumber: Fresh cucumbers will make every salad pop!
  • Cherry Tomatoes: Love juicy cherry tomatoes.
  • Vegan Feta: This is a total game changer for all my summer salads!
  • Red Onions: They add a little bit of crunch to the pasta salad.
  • Green Onions: For garnishing!
  • Olive Oil and Balsamic Vinegar: For the dressing!
  • Salt and Pepper: Enhances the flavor.

Fresh Summer Pasta Salad

This Fresh Summer Pasta Salad Recipe is perfect for hot summer days. This recipe is customizable, delicious and made out of nourishing ingredients.

For the Pasta Salad

  • 500 g Pasta
  • 1 medium sized Red Onion
  • 1/2 cup Olives
  • 1/2 cup Cucumber
  • 1 handful Cherry Tomatoes
  • 1 cube Vegan Feta Cheese
  • 1/4 cup Green Onions (For Garnishing)

For the Dressing

  • 5 tbsp Olive Oil
  • 3 tbsp Balsamic Vinegar
  • 1 tsp Salt
  • 1/2 tsp Pepper


For the Pasta Salad

  • First, cook the Pasta according to the instructions.
  • Next, dice up the Red Onion. Slice the Olives, Cucumber and Cherry Tomatoes. Chop the Vegan Feta Cheese into cubes. Cut the Green Onion into rings.
  • Toss the Red Onion, Olives, Cucumber, Cherry Tomatoes and Vegan Feta Cheese into a bowl.
  • When the Pasta has finished cooking, drain it with ice cold water. Then put it in the bowl with the other ingredients.

For the Dressing

  • In a separate bowl, pour in the olive oil, balsamic vinegar and mix in the salt and pepper. Mix until everything is well incorporated.
  • Pour the dressing over the pasta salad. Stir to combine. Garnish with Spring Onions.
  • Refrigerate the pasta salad at least one hour before serving it. Leftovers in a sealed container will keep in the fridge for about 4 days.
