This Dreamy Vegan Wild Garlic Pesto is a great way to store any leftover wild garlic. It is made with wholesome ingredients and ready in about 10 minutes. I even collected the Wild Garlic myself in the Austrian woods. It is possible to find Wild Garlic in Europe as well some parts of Asian from the months of March to May. So I highly recommend heading out for a walk with your friends and family and collect these delicious and tasty greens from mother nature yourself if you can. Alternatively you can always look out for them at your local farmers market.
What to look out for while collecting Wild Garlic
Wild Garlic is pretty easy to spot. However, if you have never collected it yourself, make sure that you are aware how it looks like. It is often mixed up with other plants that look alike but are dangerously toxic. A great way to spot Wild Garlic is also by smell – Wild Garlic has a strong unique smell to it.
How to make Wild Garlic Pesto?
Making Wild Garlic Pesto or any other pesto is fairly easy. You will need a food processor in order to blend all the ingredients for the pesto together. Adding in some wild garlic, olive oil, fresh garlic, nuts, salt & pepper and blending everything together until the pesto is fairly smooth. However I always make sure that the ingredients are not too well blended as I like to have some leafy chunks in the pesto as well.
Where to use Wild Garlic Pesto?
Wild Garlic Pesto works well with a lot of different dishes. I personally love adding it to pasta and gnocchi. However, of course you can get a bit more creative with it as well. It would be a great addition to avocado toast, oven baked vegetables or even as a dip for white pita bread.
