I have loved banana bread since I was little. Bananas are literally my favorite food on the planet, so a banana bread comes in quite handy for me. And as I like to keep my sweet treats relatively wholesome, I wanted to come up with a healthy and refined sugar free but tasty alternative to regular banana bread. Ingredient’s you will need

  • Gluten-free oat flour: Oat flour is a great alternative to all purpose flour and a much healthier choice in my opinion. You can either buy oat flour from the store or just make it yourself. I prefer making it at home, because it is quite easy and much cheaper. You will need a food processor or a blender though. And of course you will need some oats as well. Put the oats in a blender or food processor and blend them until they form a floury consistency. That’s it – now you got yourself some oat flour.
  • Mashed ripe bananas: The secret to moist and sweet banana bread are ripe bananas. Make sure that they have some dark spots before using them for this recipe.
  • Walnuts: I love adding nuts to any banana bread recipe. They provide some extra crunch and flavor.
  • Baking powder and baking soda: Helps the banana bread to rise.
  • Cinnamon: Will help to make the banana bread extra warm and cozy and immersed with flavor.
  • Salt: Enhances the flavor.
  • Plant-based milk: You can use any kind of non dairy milk you like. I personally love using oat milk for this recipe.
  • Maple syrup: To add some natural sweetness to this recipe.
  • Vanilla Extract: For additional flavor and deliciousness.

Tips for making delicious healthy banana bread

Use overripe bananas: Using overripe bananas will definitely work best in this recipe. The softer the banana is and the more brown spots it will have, the better!

Don’t overmix the batter: Mix it until the ingredients will just combine. Don’t overdo it as it can cause a less fluffy banana bread.

Save a banana for topping: Not only will the banana bread look more pretty and appealing but the overall flavor will be enhanced. And who doesn’t love caramelized banana?

Ingredients

  • 3 cups oat flour
  • 1/2 cup crushed walnuts
  • 3 large mashed overripe bananas
  • 1 large banana (for topping)
  • 3/4 cup non dairy milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 175C degrees.
  • In a large bowl, add the oat flour, crushed walnuts, cinnamon, baking powder and salt. Mix well until uniform and set aside.
  • In a separate bowl mash the 3 bananas. Mix in the non dairy milk, vanilla extract and maple syrup. Mix until everything is well combined.
  • Next add the wet mixture to the dry mixture and stir until a batter forms.
  • Cut the banana that is reserved for topping into half (cut side facing up).
  • Pour the prepared batter into a loaf pan. Spread it out evenly. Top with the cut banana.
  • Place the loaf pan into the oven and bake it for approximately 60 minutes or until a fork comes out clean. Make sure to let it cool down completely before cutting or serving it. Enjoy!

You will need a food processor or a blender though. And of course you will need oats as well. It doesn’t really matter if you are using rolled oats or quick oats. Put the oats in a blender or food processor and blend until smooth. That’s it – now you got yourself some oat flour.

What about storage?

As I already said before, these Healthy Carrot Cake Muffins are great to enjoy on the go. However, if you have ever baked muffins before you probably know that sometimes when you store them they can get quite soggy. So how to prevent soggy muffins? Well, I’ve got you sorted.

  • Let the muffins cool down completely before attempting to store them.
  • Line an airtight storage container with paper towels.
  • On top of the paper towels, place your muffins.
  • Place additional paper towels on top of the muffins.
  • Close storage container and place them somewhere at room temperature.

Using this storing method, these Healthy Carrot Cake Muffins will last up to 5 days.

Ingredients

For the Dry Ingredients

  • 2 1/2 cups Oats
  • 1/2 cup Pecans
  • 1/2 cup Walnuts
  • 2 tsp Cinnamon
  • 1 tbsp Baking Powder
  • 1 tbsp Baking Soda

For the Wet Ingredients

  • 1 cup Soy Milk
  • 1 whole Banana
  • 1 cup Carrots
  • 1/2 cup Maple Syrup
  • 3/4 cup Almond Butter

For The Flax Egg

  • 3 tbsp Flax Seeds
  • 3 tbsp Water

Instructions

  • First, start making your Flax Egg. In a small container or glass, mix together Flax Seeds with Water. Set aside.
  • Preheat the oven to 165C°.
  • Next, prepare the Oat Flour by putting the Oats in a blender or a food processor. Blend until smooth or until it forms a floury consistency.
  • Roughly chop up the Walnuts and Pecans. In a box grater or a food processor, shred the carrots.
  • In a bowl, combine the Oat Flour, Cinnamon, Baking Powder, Baking Soda, chopped Walnuts and Pecans. Whisk until everything is well combined.
  • In a food processor or blender, blend Banana, Soy Milk and Maple Syrup. Blend until smooth.
  • Pour the wet mixture from the food processor/blender onto the dry mixture. Mix everything together until a thick batter forms.
  • Next, fold in the shredded Carrots, Almond Butter and the Flax Egg. Make sure, that the ingredients are evenly distributed throughout the batter.
  • Divide the batter evenly into a greased or lined muffin tray. The batter will approximately make about 10 normal sized muffins. Bake for about 35-45 minutes at 165C°, or until the tops are golden and a toothpick comes out cleanly!

Notes

  • Almond Butter can be substituted with any nut butter of your personal preference. 
  • Soy milk can be substituted with any other plant-based milk of your personal preference.
  • Flax Seeds can be substituted with Chia Seeds.

For me, there is nothing more comforting than Brownies. If you love Brownies as much as I do, this recipe is definitely for you. These guilt-free Peanut Butter Oat Brownies are not only delicious and rich in flavors, but they are good for you too! Refined with some gooey Peanut Butter, Cocoa Powder and Vanilla Extract, those Brownies provide a fudgy texture and a chocolate infused flavor.

How to make vegan Brownies?

Making vegan Brownies from scratch is super easy and does not require a lot of time! Also no eggs, milk or dairy butter are required! Personally for this recipe I used Oat Flower, in order to make the Brownies a bit more wholesome and healthy. You can either buy Oat Flower itself, or simply blend some Oats in your food processor until they form a floury consistency. That’s all there is to it really! Next, mix all the dry ingredients together in a bowl. Then, combine the dry ingredients with the wet ingredients. Mix well and pour the combined mixture onto your baking tray. Bake for 30 minutes, slice it up and enjoy!

Peanut Butter Oat Brownies

These guilt-free Peanut Butter Oat Brownies are delicious and rich in flavors. Those Brownies provide a fudgy texture and a chocolate infused flavor.

  • 1 cup Coconut Sugar
  • 2 tbsp Baking Powder
  • 1 tsp Salt
  • 1/2 cup Peanut Butter
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Water

Instructions

  • Preheat the oven to 175C degrees.
  • Put the instructed amount of Oats into a Food Processor. Blend until they form a floury consistence.
  • Next, add all the dry ingredients into a large bowl. Mix well.
  • Then, add the wet ingredients onto they dry ingredients. Mix until everything is well combined.
  • Add the dough into the prepared baking tray and smooth it out evenly. Put it in the oven and bake it for approximately 30 minutes. Make sure to check on it every 15 minutes or so.
  • After they finished baking, let the Brownies cool down for approximately 15 minutes. After that, you can slice them up into cubes and enjoy.

Notes

  • Be aware that the longer you bake the Brownies in the oven, the dryer they will get. If you want moist Brownies, make sure not to overbake them.
